Marinate Duck with some salt, turmeric, vinegar and stock.
Preheat the oven to 160c.
In a very hot pan, brown the duck. Add garlic and ginger. Make sure the meat is golden before adding onions and some water. Stir and simmer for 5 mins or so. Add pepper corns and soy sauce. Stir, cover and cook in the oven for 60 mins.
Add potatoes and shallots and 20 more minutes in the oven. Reduce if necessary.
Gressingham duck legs (3 packs for £10) from Ocado were used in this recipe. It is not required to use any oil as the duck will give out enough fat to keep the meat moist.
