  • Tiger prawn 500g (deveined and peeled)
  • Garlic large cloves (finely chopped)
  • Onions 3 large (finely chopped)
  • Lemon a quarter juiced
  • Turmeric half a teaspoon
  • Salt Half a teaspoon or to your tasting
  • Cooking oil 4 dessert spoons
  • Paprika 1 dessert spoon
  • Extra hot chilli powder Half a teaspoon
  • Stock cube a teaspoon of concentrated stock
  • Fish sauce 2 dessert spoons
  • To garnish
  • Birds eye chillies 2 chopped roughly
  • Coriander a handful (chopped)
  • Cuisine: Cooking time: 20 mins Serving: 4 people

    Marinate prawns in lemon, turmeric, fish sauce, salt and stock.

    Use medium size sauce pan for this. Fry the onions in oil until it’s softened and slightly brown. Once this is brown, add garlic, paprika and chilli powder.

    If the mixture seems to be dry, add a little water. Turn the heat down a little and leave to simmer for 10 to 15minutes. The sauce must be cooked properly and fairly dry.

    Add the prawns in. This does not need long, when the prawns are all pink, it’s cooked. Garnish with coriander and chillies.

    Author’s note:-
    If you cooking for your guests, just cook the gravy/mixture first and leave it until you are about to serve. Add prawns last minute. The prawns can get really dry and chewy if you cook it too much.

    Best served with Rice and a spicy salad.

    In this recipe:- Morrison frozen tiger prawns were used. (M signature raw prawns, they come peeled and deveined)
