Wash the rice until the water turns clear. Drain the water until there is no water left.
You need 2 cups (1:1) ratio of rice and coconut milk. Usually 400mls of coconut will give you 2cups. Supplement with water if needed.
Preheat the oven to 160c.
Add everything in a medium sauce pan and heat it up. Once it is boiled properly (big bubbles), turn the heat off.
Put the sauce pan in the pre-heated oven for 10mins.
Take the sauce pan out, stir the rice, put it back in the oven for 10 more mins.
And the rice is ready to serve.
Mix all the ingredients in for the salad.
