  • Ingredients for Coconut rice
  • 2 cups of rice (200gms) Thai jasmine rice
  • 1 can of 400ml Coconut milk
  • Half a teaspoon of salt
  • A teaspoon of sugar
  • 1 dessert spoon of oil
  • One red onion (cut into big chunks)
  • Ingredients for Onion Salad
  • One red onion finely sliced (washed and drained)
  • A quarter of lemon
  • A quarter teaspoon of salt
  • A teaspoon of Sugar
  • A chilli chopped
  • A handful of coriander chopped
  • Cuisine: Cooking time: 25 mins Serving: 2 to 3 people

    Wash the rice until the water turns clear. Drain the water until there is no water left.
    You need 2 cups (1:1) ratio of rice and coconut milk. Usually 400mls of coconut will give you 2cups. Supplement with water if needed.

    Preheat the oven to 160c.

    Add everything in a medium sauce pan and heat it up. Once it is boiled properly (big bubbles), turn the heat off.
    Put the sauce pan in the pre-heated oven for 10mins.
    Take the sauce pan out, stir the rice, put it back in the oven for 10 more mins.
    And the rice is ready to serve.

    Mix all the ingredients in for the salad.

    Best to be served with either beef curry or Chicken Curry.
