Ingredients
  • Ingredients for Soup

  • Spare ribs 4 large
  • Chicken Wings 4
  • Coriander a handful
  • Spring onions 3 stalks
  • Sesame oil a dessert spoon
  • Salt 2 teaspoons
  • Onions one large halved
  • Ginger a thumb sized peeled and crushed
  • Garlic 3 cloves
  • Black pepper a pinch
  • Ingredients for pork Curry

  • Chicken breast 700g cut into small cubes
  • Onions 2 large chopped
  • Garlic 2 cloves chopped
  • Turmeric half a teaspoon
  • Salt half a teaspoon
  • Knorr chicken stock a dessert spoon
  • Lemon half squeezed
  • Extra hot chilli half a teaspoon
  • Paprika a teaspoon
  • 2 dessert spoons
  • a star anise
  • 400ml tin of chopped tomatoe
  • For Tofu Nway

  • Gram flour 100g roasted
  • 100ml water
  • a quarter teaspoon salt
  • Condiments
  • Roasted/fried chilli
  • Crushed peanuts
  • Fermented tofu
  • 400g pickled/sour mustard leaves
  • Spring onions chopped
  • 400g rice noodles
  • Cuisine: Cooking time: 90 mins Serving: 8 people

    Shan Noodle Salad, Soup and Tofu Nway

    There are three separate dishes in this recipe, they are all Shan dishes. It is hard to pick a favourite as they are all equally delicious. I am sure all the Shans will not be impressed by my ingredients as they are not authentic. This is the best I can do with the ingredients I get in the UK. My food critics, my family in my case, approves of my Shan dishes. Enjoy.

     

     Preparation:-

    Chop garlic and chop onions. Marinate diced pork with salt, stock, turmeric and lemon.

     

    Cooking Soup

    In the medium sauce pan, put all ingredients for soup and fill up the pan with boiling water. Simmer for 90 mins, add water as needed.

    While the soup is cooking ……

    Cooking Pork

    In a small pan, fry onions and garlic till they are golden brown. Add extra hot chilli and paprika. Stir and add marinated pork. Simmer for 20mins until the pork is soft. Reduce if necessary.

    While the pork and soup are cooking ……

    Dice the mustard leaves and keep all the liquid, as this will add the acidic flavour. Stir fry this in a sauce pan with a dessert spoon of oil and reduce until dry with no excess liquid. By frying in oil and reducing this, the mustard leaves can be kept in the fridge for a good week.

    Cooking Tofu Nway

    Mix the flour and water, make sure the mixture is very smooth(use hand blender) before heating this up, by this time the soup should be ready. Stir constantly and add soup as it gets thicken. Keep adding soup in a small amount until you have custard like consistency. Use hand blander to make sure the tofu is velvety smooth. Keep this on low heat until serving.

    Use boiling water for noodles. Add some salt. Make sure noodles are not too soft as you will cook again before serving.
