Everyone who has been to Burma would normally say, it’s like Chinese, it drives me insane. As a tourist, unless you go for street food, you will not get an authentic Burmese. All tour groups are taken to the Chinese restaurants as they are presentable and usually located in the nice area with a view. This is now changing, you can now find some Burmese restaurants with regional food.

As the country borders with so many countries, the food is diverse and varied depending on which part you come from. Southern side has a lot of influence from the Thai, you will find a lot of dishes are cooked with lemon grass, fish paste and tamarind, dishes are hot and sour with a lot of salads where the northwest side has more hot and spicy curries.

As ever, wiki has a very good page.
